Comfort food Filipino Style


When I think of comfort food I instantly think of crappy food. You know like chocolate,candy,fast food,etc etc. Why not have comfort food that truly is relaxing, healthy, and of course easy to make. Well let me tell you paleo eating animals something I recently tried for the first time: Chicken Arroz Caldo a la Kam (Filipino Porridge with Chicken and Egg). The combination of ginger, garlic, onions and chicken with brown rice hit the spot. I found the recipe in a blog that wasn’t difficult to follow at all. I made some paleo changes to it. Here is what you will need:

Well let me tell you paleo eating animals something I recently tried for the first time: Chicken Arroz Caldo a la Kam (Filipino Porridge with Chicken and Egg). The combination of ginger, garlic, onions and chicken with brown rice hit the spot. I found the recipe in a blog that wasn’t difficult to follow at all. I made some paleo changes to it. Here is what you will need:

2 pieces of chicken breast chopped
1 tablespoon of Safflower oil
2 cloves of chopped garlic
1 cup I brown rice
1 small onion chopped
1 thumb size of ginger chopped
1 tablespoon of chicken broth
1 tablespoon of olive oil or coconut oil( which ever you prefer)
4 cups of water
1 boiled egg

To get this yumminess started get a medium size soup pot to an appropriate cooking temperature. Add your tbsp of coconut or olive oil and make sure the oil covers the entire bottom of you pot. Add the chopped garlic. Cook the garlic until it turns light brown. Next add the chopped ginger and onions to the pot. Once the onions turn an almost transparent color that is when you can add the chopped up chicken breasts. Once the chicken is thoroughly cooked add four cups of water along with your one cup of brown rice, a tbsp of chicken broth, and the tbsp of safflower oil. Boil the ingredients for about 20 to 25 minutes on medium heat(depending on what brand of brown rice you are cooking with). I added sea salt and black pepper once the rice was completely cooked. It is up to you if you want to add these last few ingredients. Right before you are ready to eat this bowl of comfortness add the boiled egg. Enjoy and relax! appropriate cooking temperature.
